The word santoku loosely translates as 'three virtues' or 'three uses', a reference to the three cutting tasks the knife performs well: slicing, dicing, and mincing. The special grooves and slim serration on the back side of blade make this knife very sharp and easy to cut and allow good ventilation while slicing (non-stick).The knife can be sharpened on both sides, retaining serration and more efficient long lasting sharpness.
